I am currently a stay-at-home dad raising a two year old. As such, I typically work mostly on weekends with a half day during the week.
Here's an example of how the schedule usually works:
Saturday, 1 pm to 8 pm
Sunday, 5 am to 8 pm
Wednesday, 5 am to 1 pm
Usually, weekends are light on patients so offices don't even know I'm there. So the only time the room is unavailable is a half day during peak hours. That weekday can be whatever weekday works best for you and your office. With this schedule, I typically average three weeks per room or roughly 80 hours, though this can differ depending on the amount of detail. For example, rooms with portraits take longer to complete.

I clean the room after each session, allowing you to use the room during the rest of the week. I find that staff and patients enjoy seeing the unfinished rooms come together. When working on a room, staff often come in and see what has been added.
